Enjoy a beautiful work setting in our rooftop restaurant looking across the city of Perth, and work alongside trainee chefs to create traditional and fusion Scottish recipes, fine dining menus, gastro-style burgers and a range of cuisines to offer the experience of local and international cultures. 

Work closely with our Professional Cookery course, plus local and international students, to create and run every element of the themed events held in the Brahan restaurant: working on everything from the props to the room design, engage with customers and support each other as a team throughout your course. In year 2, it's your turn! Choose your theme, plan your event and run your own night as general manager, with support from the rest of your group; with recent themes as varied as Phantom of the Opera, Disney, Field to Fork, Alice in Wonderland, and the Elements, there are incredible opportunities to unleash your creativity, while gathering all of the knowledge you'll need to be a success in the Hospitality industry.

Entry requirements

Entry to year one HNC:

• 1 Scottish Higher at grade C or above OR
• 1 A Level at grade D or above OR
• SCQF Level 5 Food and Hospitality Studies, or Event Management OR
• SCQF Level 6 Supervision and Leadership, or Professional Cookery; OR
• Foundation Apprenticeship in Business Skills
• All applicants will be expected to attend an interview in-person or online

Advanced entry:

• Direct entry to year two of the degree may be possible with an HNC Hospitality Operations or HNC Professional Cookery
• Direct entry to year three of the degree may be possible with an HND Hospitality Management or HND Professional Cookery with Management
• Applicants with other relevant qualifications or experience will be considered on an individual basis

International students

• All prospective students are required to participate in an information interview with UHI academic staff prior to making their visa application

Year 1 - HNC

Year one of the course is either:

• HNC Hospitality Operations
• HNC Professional Cookery

Year 2 - DipHE

You will study the following core modules:

• Food and beverage operations (S1+S2)
• Work placement: team working and communication (S1+S2)
• Event planning and organisation (S1+S2)
• Skills for hospitality managers (S1)
• Marketing fundamentals (S2)
• Management accounting (S2)

Year 3 - BA

You will study the following core modules:

• Work placement: industry specific skills (S1+S2)
• Quality customer care in the hospitality industry (S1)
• Collaborating in the digital economy (S1)
• Corporate responsibility and sustainability in hospitality (S1)
• Research skills (S2)
• Marketing communications (S2)

Year 4 - BA (Hons)

You will study the following core modules:

• Dissertation (S1+S2)
• Work placement: professional development (S1+S2)
• Business strategy (S1)
• Major event analysis (S2)

You will also choose one of the following option modules:

• Global management (S1)
• Strategic marketing (S2)

Fees

For students normally domiciled in Scotland, with a term-time address in Scotland, the following fees apply:

This includes

• EU nationals with settled or pre-settled status in the UK,
• EEA/Swiss nationals with settled status in the UK
• EEA/Swiss nationals with pre-settled status who are self-employed or migrant workers in the UK.

Rest of UK students

For students normally domiciled in the rest of the UK (England, Wales and N. Ireland, including Channel Islands and the Isle of Man) and with a term-time address in Scotland, the following fees apply:

4th year free only for students studying full-time, on continuous study, who have paid for the previous three years at the University of the Highlands and Islands.

Fees are payable in advance each academic year unless otherwise agreed.

There are a number of funding options available to UK and EU students to help you pay for your studies and your cost of living while studying (see the Funding section opposite).

EU/EEA and Swiss nationals without settled or pre-settled status in the UK

Following the UK’s departure from the European Union, the Scottish Government confirmed that EU/EEA and Swiss nationals, who do not have settled or pre-settled status, will be considered as international for fee purposes. Students will get an automatic scholarship for the degree (3^rd) year and the 4^th year of study will be free for those studying full-time, on continuous study, who have paid for the previous three years at the University of the Highlands and Islands.

This includes EEA/Swiss nationals with pre-settled status who are not self-employed or migrant workers in the UK.

Students will need Student Route visa sponsorship to study in the UK.

International students

For students who do not normally reside in the UK or European Union and with a term-time address in Scotland, the following fees apply:

Part-time study is not open to international student requiring Student Route visa sponsorship to study in the UK

A no fee increase guarantee is available for self-funding full-time and structured part-time rest of the UK, EU and international undergraduate students for continuous study for the same award, up to the permitted standard time limit for the relevant award, including where students are following a recognised ‘top-up’ degree structure where the first and second years are made up of an HNC/D award.

Additional costs

You will be required to cover costs for restaurant and kitchen uniforms (approx £50-150). You will also be responsible for any additional costs incurred when travelling to and from work placements.
