Dornoch students named Young Scottish Chef Ambassadors

Two UHI North, West and Hebrides students, have been selected as Young Scottish Chef Ambassadors – a prestigious new programme launched by Scottish Chefs to celebrate their 30th anniversary.

Freya Macdonald (18), from Tain and Arek Ulicki (17), from Milton, both study SVQ Professional Cookery (SCQF Level 5) at the Dornoch campus, and are among only 30 students chosen nationwide to take part in the initiative.

The programme is designed to inspire the next generation of culinary talent by offering unique opportunities to engage with industry events, represent their college, and build valuable professional networks.

The benefits for Young Scottish Chef Ambassadors include free Scottish Chefs membership, hands-on experience at masterclasses and field trips, access to competitions, and the chance to represent Scotland on an international stage at Worldchefs meetings. Participants will also receive exclusive tools of the trade, including chef jackets, knives, and digital Worldchefs certification.

Simon Rodgers, Professional Cookery Lecturer at UHI North, West and Hebrides, said:

"I am delighted that both Freya and Arek have been given the opportunity by the Federation of Chefs Scotland to be part of their Young Scottish Chef Ambassadors programme. The opportunities presented to these students are incredibly generous and will enhance their learning and career progression in the culinary industry. I look forward to seeing all they achieve."

Freya and Arek are eager to make the most of the opportunity.

"It’s an honour to be selected, and we’re excited to represent UHI North, West and Hebrides as part of the programme,"

said Freya. Arek agreed, adding:

"This is a great chance to meet people in the industry, gain more experience, and take on new challenges.”

Freya is also celebrating reaching the semi-finals of the Zest Quest Asia competition alongside her classmates Sydney Brown and Jamie Williamson. The team impressed judges with their creative four-course menu inspired by Asian cuisine, complete with detailed recipes, costings, and presentation photos. The group are now preparing a video showcasing their dishes and cultural inspirations with the aim of securing a spot in the finals held in April.

UHI North, West and Hebrides offers a range of hospitality and professional cookery courses across their campuses in Dornoch, Fort William, Stornoway and Thurso.
